Vegetable Beef Barley Soup

This is a recipe of simple and delicious Vegetable Beef Barley Soup. Sauteing the vegetables and beef before adding the broth tremendously improves the flavor. Bursting with big, juicy chunks of meat, a harvest of yummy vegetables and hearty barley, this soup is a complete meal in itself. Enjoy!

Serves: 6-8
INGREDIENTS
- Chuck Beef: 2 pound
- Onion: 1 (sliced)
- Worcestershire Sauce : 1 tablespoon
- Celery: 2 stalks (chopped)
- Carrot: 2 carrots (chopped)
- Green Pepper: To taste
- Garlic: 1 teaspoon (minced)
- Potato: 1 diced
- Parsley: 1 teaspoon
- Thyme: 1 teaspoon
- Basil: 1 teaspoon
- Black Pepper: To taste
- Salt: To taste
- Celery Seed: 1 teaspoon
- Water: 6 cups (1.5 litre)
- Barley: 1/2 cup
- Vegetable Oil: 1 table spoon
- Ketchup: To taste
Directions
- Cut the beef into small pieces.
- Heat some oil in a large pan on medium high heat and then add Beef, Onion, Worcestershire Sauce and cook them for some time (2-3 minutes).
- Add Celery, Carrot, Green Pepper, Garlic, Potato, Parsley, Thyme, Basil, Black Pepper, Salt, Celery Seed, Water, Barley and Ketchup. Boil for 5 minutes.
- Reduce heat and cover. Simmer for 1 to 1 1/2 hours or until barley is cooked.

Tips: Season with additional salt and pepper to taste.
